Mix vinegar and light soy sauce in a small bowl. Add fine ginger slivers, then taste with a dumpling before adding more seasoning.

Toss a little tang through.
Start small, toss well and taste. A splash of noodle water helps the dressing coat evenly; a few drops of sesame oil add aroma.
